Italy On The Brain

My Mom left for Italy today.  My little brother is over there studying in Rome right now, and she is going over to visit him.  He has only 2 weeks left in his stay, so they're going to spend the rest of his time sightseeing and traveling in Italy together.

My husband and I will be headed over to Italy as well (less than 2 months 'til we leave!), and I've been up to my neck in the planning details.  So naturally, I've got Italy on the brain right now :)

I don't know what I'm more excited about:  going back to Italy and visiting all of the beautiful sights.....or the FOOD!!!!  I'm practically salivating already.  I'm like my Dad---- I could eat pasta 3 times a day for the rest of my life and never get tired of it.  So of course i'm excited to be going back to Italy... I get to stuff my face with as much gnocchi as I want.  Obviously, there are other culinary treats besides pasta in Italy to look forward to.

(By the way, my little brother figured out how to make homemade limoncello while he was in Rome.   He used lemons that he bought while he was in Sorrento....how COOL is that?   I have the most awesome little brother..... hopefully that awesome little brother will make us some when he comes home, hint hint!)

Yeah, yeah, yeah.  I know--- Pizza is NOT on my top 5 list.   Here's my defense: First of all, I love a good pizza.   (NOT the "american-ized Papa John's" kind!)   My definition of real pizza is the paper thin, crispy coal-fired crust, top-shelf ingredients kind.   And that's what you find everywhere in Italy.   Since you can find it pretty much all over the place, it's not really a novelty for me.   Don't get me wrong, that won't stop me from eating it every other day while i'm over there! lol

Even if I wasn't Italian, I still think that I'd love Italian food........and I still think that Italy would be my favorite country in the world.   I suppose that maybe it is in my blood.   Regardless, no matter who you are, once you get a taste of Italy, you'll never be able to get it out of your mind!

AMAZING Grilled Cheese!!!

I am a chronic late-night tv watcher, and one of my favorite shows to watch in bed late at night is Diners, Drive-ins, and Dives on food network. The host, Guy Fieri is fairly entertaining, and the show has a killer producer-- but more than anything else, they check out some seriously awesome food! (The kind of awesome that makes your mouth water, and can help satiate your late-night food cravings).

So a few weeks ago, we're watching this episode where Guy goes to this place called "Tom Chee" out in Ohio. Tom Chee stands for "tomato soup and grilled cheese sandwich", and this place has the most original, delicious, and bizarre menu.

One of the items that they're known for is the "blue in blue"; it's a Krispy Kreme donut sliced in half and filled with blueberry compote and blue cheese crumbles. Insane, I know. But the look on Guy's face made me want to try it--you could tell he was blown away by it.

Since Ohio isn't on my travel list anytime soon, I decided that I was going to try and make it at home instead. Obviously, this is my own VERSION of the sandwich--- creative liberties aside, the grilled cheese from Tom Cheese was the inspiration.

I made this for brunch this past Sunday, and it was soooo good. I was still trying to wrap my brain around the flavors even after I was done eating it!!

Step 1: Spray a non-stick pan with cooking spray. Heat pan to medium/high. Slice a glazed yeast donut in half, and place in the pan with the inside of the donut facing down.


Step 2: Pour 2-3 tablespoons of blueberry compote onto each of the donuts so that the glazed top is covered. (instructions on how to make homemade blueberry compote later in this post)

Step 3: Mix 2 tablespoons of room-temperature cream cheese with 1/2 cup of blue cheese crumbles. Stir vigorously until you get the consistency of lumpy peanut butter. Add one tablespoon of this blue cheese mixture on top of the blueberry compote on each side of the donut. Allow to melt and cook for 30sec-1min.

The glaze in the donut and the sugar from the blueberry compote will caramelize while in the pan, and the cheese will melt and start to meld with the flavors of the blueberry. It is very important to make sure that the flavor ratio is 2 parts blueberry to 1 part blue cheese. Personally, I think it works best like that.


Step 4: This is the really tricky part. I suggest using a cooking-spray-lubricated spatula for this portion. Slip ur spatula under one half of the donut, and SLOWLY flip it so that it creates a sandwich with the other half. I burned three of my fingers during this step, so be careful!!

It's going to be messy, there's no way to avoid that. All you can hope to do is keep as much of the filling between the two donuts as possible.


Step 5: Gently slide your donut-grilled-cheese concoction out of the pan and onto a plate (do not try to lift and transport it!! Just tip the pan and slide it onto the plate)

If you thought cooking it was messy, wait until you eat it! I felt like a little kid eating their first birthday cake--- it looked like a blueberry muffin exploded in my face. My face and arms were all sticky when I was done. Another word to the wise, white is not the best option for this culinary adventure;)

But it is amazing, trust me. Try it and you'll see.


Okay, so here's what I did to make the homemade blueberry compote. Incredibly complicated...NOT!!! :)

Step 1: Using small saucepan, cook 8oz of fresh blueberry on medium-high heat.

Step 2: Wait until the blueberries reduce by half and give up some of their liquid, then add 1tsp of brown sugar and 2tsp of flour. Cook until mixture thickens.

Seriously, that's all there is to it. I thicken my blueberry compote because it makes the sandwich a little easier to put together, and it keeps it from oozing in the pan too much. But if you have another way of doing it, go for it. Just don't use blueberry compote from a can-- that's gross.

I've come to the conclusion recently that my eyes are often bigger than my stomach.  True to form, I'm unwilling to compromise on the food that I want to try.  However, I've come up with a solution to this: Appetizers and Tapas!  Trying multiple small-bites allows you to sample more flavors than having to choose just one main entree.  Whoever invented this concept is a GENIUS.

**Side note**: The Athenians invented Appetizers back in third century B.C., but back then it looked more like sea urchins, sturgeon, and garlic served on tiny plates buffet-style.  Obviously, the Greeks decided that this new style of dining wasn't complete without lots of wine.  Highly debated, Tapas is said to be Spanish in origin.  Rumor has it that it all started when this guy (King Alfonso the 5th) got very sick back in the thirteenth century.   As a result of his illness, King Alfonso was only able to eat small bites throughout the day---usually followed with small sips of wine.  Hence the birth of Tapas.  (Also hence the reason why wine usually accompanies both things.)

I love appetizers and tapas so much that it's what I chose to serve at my wedding in lieu of a traditional "plated dinner".  Every time my husband and I go out to eat, our goal is to try as many things as possible; this usually results in us ordering 6-7 appetizers/tapas and sharing.  There are so many great new places where we live that are condusive to the tapas & apps crowd that we seldom run out of fun dining options.  But even eating out can get old after a while (not to mention budget un-friendly), so I've been trying to figure out ways to satisfy my crazy food cravings at home.

My favorite appetizers that I've tried are usually the ones that are easiest to make.  I try to keep it to a 6-ingredient limit at most, because the more ingredients you add, the more complicated it gets.  In my opinion, the best part of the whole Tapas & Apps thing is the fact that it's FUN!  If you start getting stressed out over how to make it, then it defeats the whole purpose. Cutting down on complex cooking methods and ingredients doesn't mean that you have to compromise on flavor though.  In fact, it often means the opposite.  Using fewer ingredients let things like fresh produce and local meats shine through.  Prime example: I got some awesome avocados, aspargus, cherry tomatoes, and spring onions at the farmers market this weekend, and I swear, they were so good that they didn't NEED seasoning.

I haven't tried all of the yummy options that I featured on this post yet, but the ones that I have tried are fantastic. Very user-friendly, and highly customizable.  Thanks to my cooking training from my wonderful Italian Dad, I'm usually pretty anti-recipe.  I like to wing it when it comes to cooking, and use the recipes as the main inspiration.  A lot of my favorites are from the Better Homes & Gardens website, recipes.com, and allrecipes.com.  My favorite thing about All Recipes is that they have an App for iPhone.  The App is set up like a spinner on a gameboard, which makes it really fun and easy to use.  All you have to do is pick an ingredient from your fridge that you want to use, tell the App what kind of meal you want to use the ingredient for (ie; breakfast, appetizers, etc), and *voila!*---it gives you several recipe choices.  I also recommend checking out product websites (like kraft.com, pillsbury.com, etc), as they can also be a good place to find appetizer/tapas recipes and ideas.
